This shopping list includes all ingredients for:
- Gorditas (recipe in the newsletter)
- Jollof Rice + Garlic Chicken Thighs (recipe here) NOTE: There are a lot of listed spices. Use what you can find, you don’t need every single one.
- Jollof Stuffed Peppers (recipe in the newsletter)
If an amount is not listed, you will only need a small amount of the item in the recipe, so just having one package/bottle of that ingredient will be sufficient.
All newsletter recipes feed 1-2 people. Multiply amounts for more servings.
Produce
- [ ] 1 head of garlic
- [ ] 1 white onion
- [ ] 3 red bell peppers
- [ ] 3-4 more bell peppers, any color, for stuffed pepper recipe
- [ ] 1 scotch bonnet or habanero pepper
- [ ] 1 red onion, thinly sliced
- Optional fresh fillings for gorditas: avocado, cabbage slaw, plantains, cilantro & onion, and salsa
- [ ] Optional for stuffed peppers: frozen peas, corn, or any other diced vegetable.
- [ ] Cilantro (to garnish)
Meat
- [ ] 1-2 lbs (3-6) Skin-On Chicken Thighs
- [ ] Optional extra fillers for the stuffed peppers: leftover chicken, ground meat, etc
