Ingredients
- 1 teaspoon olive oil
- 2 large eggs
- 1 ½ cups baby spinach (1 1/2 ounces)
- Pinch of salt & pepper
- 1 slice whole grain bread
- ½ cup berries of choice
Steps
- Over low heat, add oil to a pan
- add eggs and allow to cook, stirring occasionally
- once eggs are near through, add in spinach
- remove from heat, top with salt and pepper
- serve with toast and berries
